The only true "Fossa di Sogliano DOP cheese" originates from the ancient method of seasoning in tufa caves of the valleys of the Alto Montefeltro and Terre Malatestiane. After a maturation of at least 60 days, the forms, wrapped in canvas bags, are brought to season in the medieval pits of Sogliano al Rubicone, for a period of about three months. The "pits" are filled with canvas bags containing six forms of cheese each, without leaving empty spaces: this is how particular conditions of humidity, absence of oxygen and temperature are created, which will give the cheese an unmistakable aroma and taste.
